Veggie Chili

Today I made Veggie Chili- a blend I learned from 2 of my coworkers (M&R)
1 sweet onion- diced
1 bell pepper diced- I used an orange
3 carrots- diced
3 cloves of garlic- crushed
1 green squash
1 fresh ear of corn
1 28 oz can of organic diced tomatos
1 15 oz can of chili beans- i used a blend of pinto, kidney and black
3tsp of chili powder
2 tsp of cumin
1-2 tsp of oregano
2 tsp of cinnamon- Secret ingredient

Saute all veggies - add garlic then tomatoes and beans add spices plus salt and pepper to taste
Simmer 30 minnutes

Mike and I made awesome black bean soup today..totally vegan, made from the stuff we already had in our house.
